Dandelion Petal Burgers

100gms fresh dandelion petals

100gms any mix of flours

1 large onion, 2 cloves of garlic or leaves and bulbs of wild garlic (ramsons), all finely chopped

1 tspn salt

pepper to taste

any fresh or dried herbs to taste

2 large eggs beaten, or 6 tbsp gram flour mixed with 6 tbsp water (vegan option)

1 tbsp olive oil

Mix all dry ingredients ensuring petals do not clump. If you prefer, saute the chopped onion and garlic a little first

Add liquid ingredients and mix very well

Shape patties with damp hands, or ease spoonfulls of mixture into hot oil in a frying pan on medium to high heat and shape in the pan

Turn the burgers as required and cook until browned and firm
